There are over 100 metadata types available. What you will find is that most teams would normally start out with the core types discussed in this article and slowly expand the set as needed in the future.

Reports and List Views are the types that users need to be able to create and update frequently in Production. They also have minimal impact on your application logics. As a result, most teams do not use Git as the source of truth for these. Hope this gives you some pointers in figuring out the source of truth for the remaining types.
